We were thrilled to be invited by talented florist Tracey Morgan of Once Upon a Time and brilliant photographer Sarah Vivienne to accompany a number of other wonderful suppliers on a beautiful editorial wedding shoot encompassing all things floral. The brief – ‘Floral Madness’ – opulent, pretty and quirky floral displays; think oversized button holes, trailing bouquets but in an interesting twist, all juxtaposed against concrete, steel and industrial materials.

Gorgeous blooms took over every element of the day, and for us that meant introducing edible flowers into dishes, and playing with floral notes in cocktails.

Our talented chefs wrote a menu which allowed for real creative flair in the presentation. The starter was confit salmon, fennel, baby cucumber, pea flowers, followed by a beautiful vegetarian main course of BBQ heritage tomato, spiced feta, borage and basil, and all rounded off with chocolate and hazelnut cremeux, chocolate soil and chocolate mint. These simple, high quality ingredients let the prettiness, colour and vibrancy of the look of the dishes shine.
